Application
1.Food Industry
Leavening: Reacts with sodium bicarbonate to produce gas, making baked goods porous. For example, it can increase the volume of cakes and make their texture finer.
Buffering: Regulates the pH value of food and stabilizes the acid-base environment. It prevents flavor changes and microbial growth in beverages, and improves the water-holding capacity and tenderness of meat.
Emulsifying: Promotes the uniform dispersion of oil and water, prevents oil-water separation in products such as salad dressing, extends shelf life, and creates a more uniform texture.
Chelating: Complexes with metal ions and reduces their activity. It prevents browning in fruits and vegetables and delays the oxidation of oils.
Other Industrial Fields
Water Treatment: Complexes with calcium and magnesium ions, softens water, reduces scale formation, and protects equipment and pipelines.
Detergents: Chelates metal ions in water, reduces water hardness, enhances detergency, and protects fabrics.
Electroplating: Adjusts the properties of electroplating solutions, improves coating quality, uniformity, deposition rate and adhesion, and enhances corrosion resistance.
