Isomalt is an emerging functional sugar alcohol in the world in recent years, and it is an excellent substitute for sucrose, starch sugar and other sugar alcohols. It has the characteristics of low hygroscopicity, high stability, high tolerance, low calorie and pure sweet taste. From a nutritional point of view, isomalt is a carbohydrate.
